It's been several years since I've been to Disneyland, so when a friend asked me about vegan options there I couldn't remember. I turned to my Twitter community for answers, and thought I'd compile them all here for your reference. : )
- Disneyland notes on their FAQ page: "Special dietary needs — including vegetarian and medically restricted diets — can often be accommodated at select table-service restaurants. Please request special meals at least 24 hours in advance at (714) 781-DINE (3463)"

I was a vegetarian when I visited Disney World years ago and I subsisted on french fries and Mickey-shaped ice cream sandwiches (I wasn't necessarily complaining). I would have thought that Disney would have come farther by now since they cater to such a wide variety of world citizens. Baby steps, I guess.
One thing I forgot to mention - most restaurants there have "ingredient books" behind the counter with photos and complete ingredient listings for all of their items - that's how i discovered the tofu dish at Ca. Adv. and which sauces were vegan.
Disneyland now have more vegan food unlike before. There are even restaurants there that serve only vegan dishes. I find this a great improvement on their part.
the gumbo bread bowl at DL no longer contains butter and is certifiably vegan :)
